As far as I know I am the only handmade pasta inventor alive.
I'm the only American who has ever invented any pastas in Italy.
That was the first thought that crossed through my mind when I invented "Retine".
Next I feared that some Italians would poo poo my pasta solely because I'm American.
There's a word for American kitsch in Italian: "Americanata"
The words "Pasta" and "Americanata" bumped together in my head.
Immediately I conceived of the pasta you see to the left...and I got to work.
I didn't want my "Retine" pasta to be labeled an "americanata".
So I went ahead and developed Pasta Americanata to protect my legitimate pastas.
I figured if I made a Pasta Americanata there was no way my pastas could be called that.
After countless prototypes I perfected it.
It wouldn't be a true "americanata" without an outrageous price, so I gave it one.
One night I made a popular pasta from Bologna called Garganelli.
I woke up at 3am with an idea for a new pasta: "Retine" Meaning "Tiny Nets".
To my amazement no one had ever come up with it.
Both Retine and Retoni hold sauce extremely well.
Dare I say better than any pasta I'd ever eaten or made previously.
